Eric's Cookies

Cream:
1/2 C shortening
1/2 C butter (softened)
1 C brown sugar
1 C white sugar

Add and cream in:
2 eggs

Add and mix:
2 C flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 tsp vanilla extract
1 tsp maple flavoring
2 C rolled oats

Stir in:
1/2 - 3/4 bag chocolate chips
1/2 bag of toffee bits (optional but delicious!)

Roll into walnut sized balls (I use a cookie dough scoop) and place on cookie sheet. Cook at 350 for 6 - 8 minutes

I "under" cook mine so they stay soft. Usually about 6 1/2 minutes and then take them directly off the cookie sheet and transfer them to a paper towel to keep them moist while they cool :)These are our favorite cookies! VERY yummy!

Pesto Cordon Bleu

Yield: 2 servings (3 chicken rolls each)

Ingredients:

3 Chicken Breasts or 6 tenders
6 slices Deli Ham
6 slices Bacon
6 tsp Prepared Pesto
~4 oz Swiss Cheese

Directions:

Cut chicken breasts into two strips or leave tenders whole. Pound the chicken with a mallet until it is 1/4 inch thick. Spread Pesto on one side of each chicken strip. Place a piece of ham on top of the pesto. Place one layer of sliced swiss cheese on top of the ham. Roll the chicken. Then roll a piece of bacon around each rolled chicken and secure with toothpicks. Place on a greased cookie sheet and bake at 350 for 30 - 35 minutes or until chicken is no longer pink.

Verdict:

This dish is really tasty! It's a nice spin on traditional chicken cordon bleu. I usually serve it with mashed potatoes or baked sweet potatoes and a green veggie.
