Creamy Rice Pudding

In a saucepan, combine:

1 1/2 cups cooked white rice
1 1/2 cups milk
1/3 cup white sugar
1/4 tsp salt

Cook over medium heat until thick and creamy, 15 - 20 minutes. Stir in:

1/2 cup milk
1 egg, beaten
raisins, nuts, chocolate, etc if you want

Cook 2 more minutes, stirring constantly. Remove from heat and stir in:

1 Tbsp butter
1/2 tsp vanilla
Cinnamon (optinal)

Serve warm or chilled. SO yummy! I make this often with leftover rice.
